Olivelle's Gorgonzola, Pear & Rosemary Pizza

Ingredients: 

  • 1 ball raw Pizza Dough 

  • 2 Tbsp Olivelle Wild Rosemary Infused Olive Oil (Available in Store Only)

  • 2 tsp Olivelle Onion & Spice Dipper

  • 1/2 cup Gorgonzola Cheese

  • 1 Ripe Pear, sliced thin

  • 6 Slices Prosciutto

  • For Garnish:

  • 2 cups Arugula

  • 1 Tbsp Wild Rosemary Olive Oil (Available in Store Only)

  • 1 tsp Sriacha Sea Salt

  • 2 Tbsp Crispy Anjou Pear Balsamic Vinegar, to finish (Available in Store Only) 

Directions:

Remove pizza dough from fridge well in advance of making your pizzas. A cold dough has the potential to crack your stone.

Place your pizza stone on the middle rack and preheat your oven to 400 degrees for at least 30 minutes before making your pizza.
On a floured surface, roll the pizza dough out into a 12" circle that is about ¼” thickness. Depending on how much dough (and hungry mouths!) you have, you may need to make multiple pizzas. Fold the dough in half to transfer to a pizza peel dusted with cornmeal, and unfold.

Prepare all of the ingredients to build your pizza.
Drizzle one side of the dough with 2 tablespoons of Rosemary Olive Oil & sprinkle it with Olivelle's Onion & Spice dipper. Arrange Gorgonzola, Pears, and Prosciutto across the top of the pizza, taking care to leave a bit of the dough bare around the edges for crust. 

Transfer the pizza onto the stone in the oven and bake until the crust is browned and the cheese is melted, about 12–15 minutes. Remove from oven using pizza peel and transfer to cooling rack to let cool for a few minutes.

In the meantime, mix the arugula with 1 tablespoon Rosemary Olive Oil and Sriracha Sea Salt. Toss to coat and arrange in the middle of the pizza. Finish pizza with a drizzle of Crisp Anjou Pear Balsamic and enjoy!

Quick Recipe Note: We recommend buying Gorgonzola in a wedge rather than pre-crumbled for optimal flavor. If you don't like Gorgonzola, switch it our for Mozzarella, Brie, or Burrata!
