Thinking back on our childhood, there were so many seasonal treats that we looked forward to year after year. Halloween always got us excited because of the promise of sugary treats behind every door! So much of the focus has shifted from these wonderful homemade treats to store-bought candies & goodies, but not this year! Take the time to make some delicious old-fashioned caramel popcorn balls.
Pop your popcorn & set aside in a large bowl. In a sauce pan or cocotte, combine your sugars, syrup, water, vinegar & salt. Stirring frequently, cook over medium high heat until boiling.
Once boiling, stir constantly until a small amount of your caramel mixture enters the so-called "hard ball stage". Or if you are using a candy thermometer, your mixture reaches the temperature range of 250°- 266°F.
Reduce heat to low & stir in butter until melted. Pour syrup over popcorn in bowl, stirring until well coated. (Optional: add additional ingredients like colored sprinkles, m&m's, toffee chips, etc,) Let cool slightly, butter hands & form in balls.
The Nordic Ware Popcorn Popper efficiently transmits microwave energy directly to the popcorn kernels, popping them quickly without oil. It produces the results of a hot-air popper without an additional appliance. This oil-free method is refreshing when compared to bagged corn, because you don't have to contend with grease, salt, & artificial flavoring!
Light Muscovado Sugar is a fine, subtle and versatile molasses sugar. With its rich aroma and delicate flavor, it is a superior substitute in any recipe calling for light brown sugar. If the sugar hardens, place it in a bowl & cover with a wet cloth, the sugar will begin to soften again.
